
Since the outbreak of COVID-19 in the country, a lot has changed drastically. In a sense that everything changed routines. The day of march 13th was when my semester was suspended due to the outbreak, days later our teachers informed us that we would be still finishing projects and having classes virtually. Malls, restaurants and other public places were closed days after. All of these events occurred in less than a week. It all went by fast. Due to overwhelming times, my defense mechanism ran into eating unhealthily. I have been nibbling on chips, cookies and any other snack am exposed to. Pleading guilty, I know my blog is supposed to be providing healthy advices. But I felt like sharing one of my favorite recipes for crepes. I love crepes so much and they have been cheering my mood lately. Because we are currently obliged to stay home these days, I have a feeling we are all going to be amazing cooks after this. Below I will be sharing a recipe for crepes with fresh strawberries and cream:
To prepare the crepes:
You are going to need:
- 4 eggs
- 1 1/3 cups milk
- 2 tablespoons oil
- 1 cup flour
- ½ teaspoon salt
Add eggs to a bowl, you can mix them up. Add milk, oil, flour, and salt and mix well until the mixture is smooth.
Place a non-stick saucepan on the stove and heat it over medium heat. Rub a small amount of oil over the surface of the pan. Pour in ¼ cup of the crepe batter and quickly swirl the pan over. Cook for 2 minutes. Loosen the edges with a non-metallic spatula and turn the crepe over. Cook for a minute and remove the crepe from the pan. Repeat the same process for the rest of the Batter, rubbing a small amount of oil on the pan each time.
To prepare the filling:
You are going to need:
- 1-pound strawberries
- 4 ounces cream cheese
- 1 ¼ cups heavy cream
- ¼ cup powdered sugar
First wash the strawberries and dry them. Take a huge bowl. Add cream cheese and mix until it’s fluffy. Add the heavy cream and mix until it gives a soft whipped cream. Add powdered sugar and mix rigorously. Finally add the strawberries into the cream.
Place a crepe on a plate. Add a 1/3 cup of the strawberry cream in the middle of the crepe and fold it. Sprinkle the crepes with powdered sugar.
